[Ingredients]
- 200g plain flour
- ½ teaspoon baking powder
- 30g cornflour
- 20g milk powder
- 50g cocoa powder
- 150g salt-reduced butter, softened at room temperature
- 100g soft icing mixture (or pure icing sugar)
- 1 egg
- ½ teaspoon vanilla extract
Butter Cream Filling:
- 80g pure icing sugar
- 60g salt-reduced butter, softened at room temperature
- ½ teaspoon vanilla extract
[Preparation]
1. Preheat oven to 165-170°C. Sift together plain flour, cornflour, baking powder, milk powder and cocoa powder.
2. Cream softened butter with icing sugar and vanilla until light and fluffy (about 10 minutes). Beat in egg until combined. Fold in sifted flour mixture.

3. Divide dough into 2cm balls (about 10g each), rest dough 5-10 minutes if it is a little too sticky to handle. Place spaced apart onto a cookie tray.

Use a flat-bottom glass to press the dough down flat (dust the bottom of the glass by dipping it in a little cocoa powder if necessary to prevent sticking).
4. Bake for about 8 minutes, or until cooked. Let cool.
5. Prepare Butter Cream Filling by creaming butter, icing sugar and vanilla until light and fluffy.
6. Sandwich two cookies with Butter Cream Filling.
